Raisn Stuffed French Toast

Ingredients
- 8 slices Cinnamon Raisin Bread
- 8 oz. cream cheese softened
- 1/2 cup raisins
- 1 TBS XX sugar
- 1 tsp vinalla
- 4 eggs
- 1 cup milk
- 2 tablespoons butter
- 1/2 cup maple syrup (optional)

Directions
1. Mix cream cheese, raisins, XX sugar, and vanilla together.
2.Arrange the bread in four stacks so that equal-size slices are on top of each other. Evenly spread 1 tablespoon of cream cheese over 1 slice in each stack, leaving a 1/4" border. Top each stack with the remaining slice, and press gently to seal.
3. In a large shallow bowl or pie plate, combine the eggs and milk, whisking until smooth.
4. Melt 1 tablespoon of butter in a large nonstick skillet over medium high heat. Working in batches, quickly dip both sides of each sandwich into the egg mixture (do not soak). Transfer to the skillet and cook for 2 to 3 minutes on each side, or until golden brown. Repeat with the remaining butter and sandwiches. Serve warm. If desired, serve with syrup.
