Ingredients

  • 1/3 c. low-fat plain yogurt
  • 2 tbsp. lemon juice
  • 1 tbsp. peeled, minced ginger root
  • 1 clove garlic
  • 1/2 tsp. ground cumin
  • 1/8 tsp. ground red pepper
  • 4 whole chicken breasts, halved and skinned (32 oz.)
  • 1 1/4 c. oat brain cereal flakes, crushed

Step 1

Combine yogurt, lemon juice, gingerroot, garlic, cumin, and pepper. Add chicken, turning to thoroughly coat. Cover and refrigerate at least 2 hours, turning occasionally. Spray 13 x 9 baking dish w/ nonstick cooking spray. Remove chicken from sauce w/ as much sauce as possible. Coat w/ cereal. Place fleshy side up in pan in a single layer. Bake at 400 for 50 mins. or till brown and tender.
