Ingredients

  • 1 ) 2 (14 1/2 oz.) cans black-eyed peas, drained
  • 2 ) 1 (15 1/2 oz.) can drained yellow corn
  • 3 ) 2 medium tomatoes, chopped
  • 4 ) 4 green onions, chopped
  • 5 ) 2 cloves garlic, minced
  • 6 ) 1 medium bell pepper, seeded and chopped
  • 7 ) 1 Jalapeno pepper, seeded and chopped
  • 8 ) 1/2 cup chopped onion
  • 9 ) 1/2 cup fresh parsley, chopped
  • 10 ) 1 (8 oz.) bottle Italian salad dressing

Step 1

Combine all ingredients except, Italian dressing, mix well. Pour salad dressing over mixture. Cover and marinate at least 2 hours in refrigerator. Drain and serve with Frito's or Scoops. Makes 7 cups.
