Ingredients
- 1 ) 2 (14 1/2 oz.) cans black-eyed peas, drained
- 2 ) 1 (15 1/2 oz.) can drained yellow corn
- 3 ) 2 medium tomatoes, chopped
- 4 ) 4 green onions, chopped
- 5 ) 2 cloves garlic, minced
- 6 ) 1 medium bell pepper, seeded and chopped
- 7 ) 1 Jalapeno pepper, seeded and chopped
- 8 ) 1/2 cup chopped onion
- 9 ) 1/2 cup fresh parsley, chopped
- 10 ) 1 (8 oz.) bottle Italian salad dressing

Step 1
Combine all ingredients except, Italian dressing, mix well. Pour salad dressing over mixture. Cover and marinate at least 2 hours in refrigerator. Drain and serve with Frito's or Scoops. Makes 7 cups.
