Ingredients

  • 1/2 cup margarine or butter, softened
  • 1-1/4 cups splenda
  • 3 tbsp. light molasses
  • 1 cup canned pumpkin
  • 1 med. egg
  • 1-1/2 tsp. vanilla
  • 1-2/3 cups all purpose flour
  • 1 tsp. baking powder
  • 1-1/4 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup minature semi-sweet chocolate chips

Preparation

Step 1

1. Beat margarine, Splenda and molasses until well combined.
2. Mix in pumpkin, egg and vanilla until well blended.
3. Gradually stire in combined flour, baking powder, spices, baking soda and salt until well blended.
4. Stire in chocolate chips.
5. Drop by teaspoonfuls onto sprayed cookie sheet. Bake in preheated 350 degree oven 11-14 minutes.
6. Remove and cool completely on wire rack. Store at room temperature in airtight container up to 1 week. Makes about 4 dozen cookies.
