Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp sugar
  • 1 large egg
  • 1/2 cup plain yogurt
  • 3-4 tbsp warm water
  • 1 tbsp ghee or softened butter
  • Oil for frying

Preparation

Step 1

Combine flour, baking powder, salt, and sugar in a large bowl and mix. Make a well in the center

Add egg, yogurt, and water to the well and stir with a spoon to combine. Then pull in the dry ingredients with a spoon and mix until a soft dough forms. Turn out onto an UNFLOURED work surface and knead 5 minutes to make a smooth dough that is soft (not sticky)

Rub ghee or butter onto the plams of your hands and knead it into the dough. Cover the dough with a wet paper towel and let rest at room temp for 3 hours.

When you are ready to cook, divide dough into 12 equal pieces and roll into a ball. Cover with a damp paper towel.

Heat 2 inches of oil in a large pan to 325F. Set one of the balls on an UNFLOURED work surface and flatten into a 2-inch disk. Roll the disk into a thin 4-5 inch diameter (1/8 in thick) The disk must be thin to puff properly.

Once all disks are made, glide a disk into the oil. The dough will bob to the surface, press down on a slotted spoon to keep submerged to brown evenly. When light golden borwn and puffed (15-30 seconds), gently turn to brown the other side. Remove and place on a paper-towel lined plate.

Serve immediately.
