Ingredients

  • 1 1/2 TSP OLIVE OIL
  • 1 MEDIUM ONION SLICED
  • 1 SHALLOT HALVED AND SLICED
  • 4 CLOVES GARLIC MINCED
  • 1/2 TSP SALT
  • 1/2 TSP CARAWAY SEEDS
  • 1/4 TSP BLACK PEPPER
  • 1 TSP CAYENNE PEPPER
  • 3 TBSP PAPRIKA
  • 2 LBS RED POTATOES THINLY SLICED
  • 2 CUPS CHICKEN BROTH
  • 2 TBSP TOMATO PASTE
  • 1/2 CUP SOUR CREAM

Preparation

Step 1

HEAT OIL IN PAN, SAUTÉ ONION, SHALLOT, GARLIC 1 - 2 MINUTES UNTIL THEY BEGIN TO SOFTEN ADD IN REMAINING SEASONINGS AND STIR, REMOVE FROM HEAT.

ADD ONION MIXTURE , POTATOES, STOCK AND TOMATO PASTE INTO CROCK POT STIR TO COAT POTATOES, COOK ON HIGH 2 1/2 HOURS ON HIGH TILL THE POTATOES ARE TENDER

SERVE TOPPED WITH SOUR CREAM
