Corned Beef and Cabbage

Ingredients

  • 1 can (12 oz.) corned beef, crumbled
  • 1/2 head cabbage, cut into 4 wedges (about 1 1/4 lb.)
  • 2 medium potatoes, thinly sliced (about 2 cups)
  • 1 medium onion sliced
  • 1/4 cup of water
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup butter or margarine, melted.
  • carrots may be used in addition or in place of onions

Preparation

Step 1

1. In greased 3-quart casserole dish, layer potatoes and onion; add water, salt and pepper. Heat, covered, 7 to 8 minutes on HIGH.

2. Add corned beef and cabbage; pour butter over cabbage. Heat, covered, 10 to 11 minutes on HIGH until cabbage is tender, turning dish once. Let stand, covered, 5 minutes before serving.
