Reverse Marinated Flank Steak

Ingredients
- 1/2 cup loosely packed flat leaf parsley
- 1/2 cup loosely packed cilantro
- 3 Tbsp. chopped fresh chives
- 2 cloves garlic, outer skins removed
- 1/4 tsp sea salt
- Pinch of freshly ground black pepper
- 2 Tbsp lime juice
- 2 tsp lime zest
- 1/4 cup olive oil
- 2 lb Flank steak
- Sea salt to taste
- Freshly ground black pepper to taste

Step 1
Heat grill to medium high heat
Place the parsley, cilantro, chives, and garlic on a cutting board that has a well around the edges to catch the juices. Finely chop them all together until minced and combined. Add the salt, pepper, lime juice, zest, and olive oil. Mix it around with your knife to combine. Set aside.
Season flank steak on both sides with salt and pepper. Grill steak, 5 minutes per side, or until desired doneness. With your knife, scrape half of the marinade to the side of the cutting board. Lay the steak on top of the remaining marinade. Then use your knife to spread the other half of the marinade over the top of the steak.
Cover steak with foil and let it rest 10 minutes. Slice against the grain and serve.
