Ingredients

  • 1/4 cup pineapple juice
  • 1/4 cup vegetable oil
  • 2 tablespoon rum or dry sherry
  • 1 envelope garlic and herb salad dressing mix
  • 1/2 teaspoon ground ginger
  • 1 pound mahi-mahi or swordfish steak, cut into 1 1/2 inch chunks
  • Red pepper chunks, pineapple chunks and green onion pieces

Step 1

Mix juice, oik, rum, salad dressing mix and ginger in crust or small bowl until well blended. Pour over remaining ingredients; cover. Refrigerate 30 minutes to 1 hour to marinade. Drain; discard dressing
Arrange fish and vegetables on skewers.

Place kabobs on rack of broiler pan. Broil 3 to 5 minutes from heat, to 6 minutes on each side or until fish flakes easily with fork.
