Ingredients
- 1 C all purpose flour
- 1/2 C whole wheat flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/2 C honey
- 1/4 C lemon juice
- 1/4 C melted butter
- 1/2 tsp grated lemon peel
- DRIZZLE
- 1/4 C powdered sugar
- 1 tsp lemon juice
- Additonal lemon peel if desored

Preparation
Step 1
- Combine dry ingredients
- In separate bowl, combine egg, honey, lemon juice, butter and lemon peel; stir into dry ingredients until moistened
- Fill sprayed muffin cups 1/2 full
- Bake at 375 for 15-18 min until pick comes clean; cool 5 min before removing form pan to wire rack
- Combine drizzle ingredients and drizzle over muffins; sprinkle with addtional lemon peel if desired
