For some reason this recipe works best with flank steak. Other cuts of meat don’t seem to taste as good. This recipe is good for about 1.25 – 1.5 lbs. of meat. The two most important steps are cutting the meat and the spicy mustard.

Ingredients

  • Combine 2 Tablespoons of each in a glass bowl:
  • Lemon juice or limejuice (lime juice is best)
  • Red cooking wine
  • Soy sauce
  • Worcestershire sauce
  • Add 1 Tablespoon of olive oil
  • 1 clove of garlic - sliced.
  • Salt and pepper to taste
  • Several dashes of hot sauce

Step 1

Coat the meat with 2 Tablespoons of spicy mustard. See directions below.

Remove fat and sinew from the flank steak. This is the fat and tendons that run through the steak.

There are two ways to go from here:

If you want to cook the steak whole, score it across the top like this #. Then spread the spicy mustard on both sides and place the raw meat in a zip lock bag and add the liquid marinade above. Let it sit for at least 8 hours or over night.

For sandwiches, place the meat with the fibers running from left to right on the cutting board. Place a sharp knife perpendicular to the fibers the tilt the knife to a 45 degree angle and slice ¼ inch slices exposing the ends of the meat fibers at an angle. Place the strips in a mixing bowl and add the spicy mustard and coat all of the sliced meat evenly. Place the meat in a zip lock bag and add the marinade. Mix the marinade up in the bag and let sit for at least 8 hours or over night.
