Ingredients

  • 1/4 cup pot barley
  • 6 cups water
  • 1 tsp salt
  • 1 cup diced celery (3-4 stalks)
  • 2 cups carrots (6 small carrots)
  • 1 medium onion
  • 1 tsp parsley
  • 1 tbsp vegetable flakes (rounded almost 2 tbsp)
  • 1 large can tomatoes with juice-diced
  • 2-3 tbsp butter
  • pepper

Preparation

Step 1

Cook first 3 ingredients for 1/2 hour - careful, will boil over. Cook cover off. (Once boils heat 2)
Add ingredients 4-8 and cook covered 1/2 hour more (once boils-heat 1-2)
Add tomatoes and simmer 1 hour covered
Add butter and pepper to taste
