Ingredients
- WET-
- 1/2 cup mashed banana
- 1/2 cup grated zucchini
- 1/3 cup grape seed oil
- 1 cup "milk"
- 1/4 cup blackstrap molasses
- 1/4 cup maple syrup
- DRY-
- 2 cups spelt flour
- 1 cup ground flax seed
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp allspice
- AFTER MIXING ADD IN
- 1/2 cup dates, finely chopped
- 1/2 cup-1 cup pecans, finely chopped

Preparation
Step 1
Preheat oven to 375 F. Lightly oil a muffin pan.
In a large bowl, combine dry ingredients. In a separate bowl mix together wet ingredients.
Add wet to dry and stir lightly until just blended. Do not overmix. Add dates and pecans. Pour batter into muffin pan and bake 15-20 minutes. Allow to cool before removing from pan.
