Mexican Cornbread

Great Mexican cornbread!

Ingredients

  • 1-1/2 c. self rising yellow corn meal
  • 1 small pepper, chopped
  • 1/2 c. oil
  • 1/2 c. cheddar cheese
  • 1 c. buttermilk (can substitute 1 TBSP lemon juice or vinegar and 1 c. milk)
  • 3 eggs, beaten
  • 1 c. cream style corn (add 1/2 tsp. Tabasco, if desired)

Preparation

Step 1

Mix, bake at 400 degrees for 30 - 45 minutes in an 8 x 8 pan
