Ingredients

  • 1/4 cup butter
  • 2 medium onions, diced
  • 3 cups warmed chicken or vegetable broth
  • 32 oz butternut squash puree
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sage
  • 1/4 tsp nutmeg
  • 1 c whipping cream (or half and half)

Step 1

Saute onion in butter until translucent. Stir in broth and puree. Bring to a simmer, reduce heat to medium-low, stir occasionally for 15 minutes. Add seasonings, stir in cream and puree.
