Ingredients
- 2 cups dried chickpeas
- 1 small onion, coarsely chopped
- 1 clove garlic, chopped
- 1 cup parsley, chopped
- 1/4 cilantro, chopped
- 2 frest mint leaves, chopped
- 3/2 tbsp kosher salt
- 3/2 tsp ground black pepper
- 1 tsp ground cuminc
- 1 tsp ground coriander
- Veg oil - for deep frying

Preparation
Step 1
Put chickpeawl, add water to cover in a large bowl, add water to cover by about 2 inches, and place in fridge overnight.
Drain chickpeas and toss in bowl with onion and garlic. Run the mixture through with a medium blade of a meat grinder. Toss mixture with parsley, cilantro, mint, salt, pepper, cumin, and coriander. Run through grinder again.
Heat 4 inches of oil to 350F. Using a tablespoon, shape falafel and fry until browned, about 3 minutes.
