Ingredients

  • Pancakes:
  • 1 cup flour
  • 1 tsp each baking powder and sugar
  • 1/4 tsp each baking soda and salt
  • 1 egg
  • 1 tsp orange rind
  • juice of 1 orange
  • 3/4 cup buttermilk
  • 1 tbsp melted butter
  • Sauce:
  • 1-2 tbsp butter
  • 2 oranges, peeled and thinly sliced
  • 1/3 to 1/2 cup maple syrup
  • 1/4 cup finely chopped toasted pecans

Preparation

Step 1

Combine dry ingredients for pancakes. In another bowl, beat egg with orange rind and juice, buttermilk and melted butter. Stir into flour mixture to make a smooth batter. Drop by scant 1/4 cups onto greased griddle or nonstick pan. Cook until browned on both sides. Keep pancakes warm in the oven.

For sauce, melt butter in saucepan and add orange slices, maple sugar and pecans. Cook until just heated through and serve over pancakes.
