  • 4 eggs
  • 2 T water
  • 2 t margarine
  • 1 can refried beans
  • Salsa
  • Flour tortillas
  • Shredded cheese
  • Sour cream

Step 1

Whisk eggs and water. In skillet, melt butter. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that uncooked portions can flow to bottom. Cook 3-4 minutes or until eggs are thickened throughout but still moist.

Meanwhile, spread refried beans and salsa on tortillas to within 1/2 inch of edge. Sprinkle with cheese. Microwave each burrito 30-45 seconds until tortilla and beans are warm and cheese is starting to melt.

Place egg on tortilla. Spoon sour cream on top of mixture. Fold top and bottom ends of each tortilla about 1" over filling; fold right and left sides over folded ends, overlapping.

Note: Leave off the egg for bean burritos.
