The Raspberry chips are a thing of the past. No longer available. Very sad! I have since renamed them to distinguish them from the Chocolate Raspberry bars.

Chocolate Wafer Cookie Bars (formerly Raspberry Chip Bars) 0 Picture

Ingredients

  • 1 package Chocolate Wafer cookies
  • 1/4 cup sugar
  • 1 stick melted butter
  • 1 14 oz. can sweetened condensed milk
  • 1 10 oz. package raspberry chips
  • 1 12 oz. package white chocolate chips
  • 1 1/2 cups macadamia nuts, coarsely chopped
  • 1 cup sweetened coconut

1. Carefully prepare the baking pan as follows. Line a 9x13" pan with release foil. Spray the foil with Pam. On top of the sprayed foil, place a sheet of parchment paper. Spray this with Pam also. Be sure the foil and parchment overhang the dish. This will allow you to lift and remove the entire recipe from the pan.

2. Crush the cookies. Add melted butter and sugar. Mix well and press into the bottom of the prepared pan. Spread the sweetened condensed milk on top of the cookie mixture. Spread the raspberry chips, then the white chocolate, coconut and finally the macadamia nuts. With your hand in a sandwich bag, press the ingredients into the cookie base. Bake at 325F till coconut begins to brown lightly, about 30 minutes. Cool completely. Carefully lift out of the pan. Cut into bars and peel the foil and paper from the bottom and sides.

Tips
I thought this was the best recipe we made in 2006. Unfortunately, the recipe was lost in the transition from one cookbook program to another. This is a re-creation as best as I can remember it. I can't remember the cooking time, so next time it is made, time it and add to the recipe.

In looking online for this recipe I learned that Hershey's has probably discontinued the raspberry chips :-(. If I find some I will buy all that I can lay my hands on!

Adding to all bar cookies often baked for Christmas: Line each 9x13 pan with release foil so bars can be easily lifted for wrapping before you are ready to cut them.

5 stars - Just a piece of heaven! Ingredients are difficult to find. The wafer cookies are by the ice cream toppings. The raspberry chips were only found at the F-V Food Lion. It is also a really expensive recipe. None of the ingredients are cheap! - ME 1/26/2007
