Ingredients
- Chocolate Truffle Cheesecake
- Crust
- 1-1/2 cups crushed chocolate wafers
- 1/4 cup melted butter
- Filling
- 3 pkg cream cheese (softened)
- 2/3 cup white sugar
- 1-1/2 tbsp cocoa powder
- 3 eggs
- 1 tsp vanilla
- 1/4 cup hazelnut liquer
- 8 squares semi-sweet chocolate (melted)
- Pan – 9” springform pan, greased sides and bottom

Preparation
Step 1
1) Combine crumbs and butter, press firmly into pan, bake for 5 minutes @ 300º.
Set aside
2) Filling: Beat till well blended: cream cheese, sugar, cocoa, eggs (1 at a time),
vanilla, liqueur, and slightly cooled chocolate. Pour over crust. Bake @ 300º, 2nd
rack up for 45 min, then lower heat to 250º for 10 min. Turn off the oven and
leave cake in for 10-15 min more. Remove from oven and let sit until set, remove
from pan. Chill for 48 hours.
