Ingredients

  • 1 1/2 1 1/2 1/2 cups 1 1/2 cups oats
  • 2 1/2 2 1/2 1/2 cup 2 1/2 cup flax seeds
  • 2 2 2 cups Whole Wheat Flour (I use spelt)
  • 2/3 2/3 2/3 cup rapadura (or you can use brown sugar)
  • 1-1/4 1-1/4 1-1/4 cup shredded coconut
  • 1/2 1/2 1/2 cup sunflower seeds
  • 1/2 1/2 1/2 tsp. salt
  • 1/2 1/2 1/2 tsp. vanilla
  • 1 1 1 cup finely chopped dried fruit (apricots, raisins,
  • dates, figs, cranberries, etc. Mixtures are fun, and the
  • food processor is great for this.)
  • 1/4 1/4 1/4 cup honey
  • 1 1 1 cup virgin coconut oil
  • 1 1 1 teaspoon baking soda
  • 2 2 2 tablespoons hot water
  • 3 3 3 eggs, beaten
  • 1 1. Preheat to 350 to 350 degrees.
  • 2 2. Mix 8 first 8 ingredients (oats-vanilla).
  • 3 3. Melt 3. Melt honey and coconut oil together. Butter sub for oil.
  • 4 4. Mix to baking soda with hot water and add to coconut oil mixture.

• 1-1/4 cup shredded coconut
• ½ cup sunflower seeds
• 1/2 tsp. salt
• 1/2 tsp. vanilla
• 1 cup finely chopped dried fruit (apricots, raisins,
• dates, figs, cranberries, etc. Mixtures are fun, and the
• food processor is great for this.)
• ¼ cup honey
• 1 cup virgin coconut oil
• 1 teaspoon baking soda
• 2 tablespoons hot water
• 3 eggs, beaten

1. Preheat oven to 350 degrees.
2. Mix first 8 ingredients (oats-vanilla).
3. Melt honey and coconut oil together. Butter sub for oil.
4. Mix baking soda with hot water and add to coconut oil mixture.
5. Pour coconut oil mixture into dry ingredients, add eggs and mix well.
6. Place mixture into desired pans (lightly greased) and flatten mixture slightly. Bake 10 minutes for mini muffins, 15 minutes for regular muffins, 20-25 minutes for a 9×13 pan at 350 degrees or until golden. Remove from oven and let cool on wire racks. Store in an air-tight container. Enjoy!
