This is my favourite Nicoise Salad. Dan will eat it occasionally, although top his with Catalina or other bottled dressing of choice.

TUNA*****Salade Nicoise with Teriyaki Dressing - 9 Points 1 Picture

Ingredients

  • DRESSING:
  • 4 ounces small round potatoes, halved or quartered (OPTIONAL)
  • 6 oz. green beans, cut into 1 " pieces
  • 1/4 red onion, thinly sliced or 2 - 3 green onions
  • 1 tomato, cut into wedges
  • 1 small cucumber, sliced - Optional
  • 1/2 sweet red or yellow pepper, cut into strips
  • 1 can Calipo Tuna, drained and flaked OR
  • 1 tuna steak - 6 oz. broiled, cooled and cut into chunks (It's better with canned!)
  • 1 egg, hard boiled and quartered
  • 4 kalamata or nicoise black olives, pitted and halved
  • 1 oz. mozzarrella or other low-fat cheese, cut into strips
  • 1 tsp. dijon
  • 1 clove garlic
  • 1 1/2 tbsp. EVOO
  • 1 tbsp. rice vinegar
  • 1 tbsp. teriyaki sauce
  • 1 tbsp. water
  • 1 tsp. dill or tarragon

Preparation

Step 1

Cook beans and potatoes in boiling water for 8 to 10 minutes or until potatoes are tender and beans are tender-crisp. Drain and set aside.

Hard boil egg.

For dressing, place all ingredients in small jar and blend until thoroughly combined.

Arrange salad ingredients on lettuce-lined plates and divide dressing between them.
