Ingredients

  • COCONUT TOPPING:
  • 4 oz unsweetened chocolate
  • 2/3 cup butter
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 egg
  • 1/2 tsp vanilla
  • 1 cup flour
  • pinch salt
  • 1 cup almonds, chopped
  • 1/2 cup sugar
  • 1 egg
  • 1 tablespoon flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 7 oz. coconut
  • 1 can Sweetened condensed milk

Step 1


1. Heat oven to 325. line a 9x13 inch pan with release foil. If you don't have the foil grease and flour the pan.

2. Make chocolate layer: Combine chocolate with butter in a large microwave bowl. Microwave high 1 1/2 minutes, until almost melted. Stir until smooth. Stir in sugars, eggs, and vanilla till smooth. Beat in flour and salt. Spread evenly in prepared pan. Sprinkle with almonds.

3. Make topping: Whisk together granulated sugar, eggs, flour, baking powder and vanilla in a bowl for 30 seconds. Stir in coconut. Pour topping evenly over chocolate layer. Bake 45-50 minutes until golden and just set in the middle. Cool in pan on wire rack. To cut bars: Lift out of the pan with foil. Peel off foil. Cut to form rectangles. (Can be made ahead.) Cover and freeze up to 1 week. Thaw at room temp.
