Italian Rice Pie

Ingredients
- Crust
- 2 1/2 cups flour
- 1/2 cup sugar
- 3 eggs
- 1/2 stick butter
- 1 tbsp. baking powder
- 1/2 tsp. vanilla
- Filling
- 1/2 cup rice uncooked
- 1 quart milk
- 1 lb. Ricotta cheese
- 1 tbsp. lemon juice
- 6 eggs
- 1 1/2 cup sugar
- grated lemon rind

Preparation
Step 1
Crust
Mix together for regular pie crust. Roll out to fit pie dish. Reserve a part to make strips for top of pie.
Filling
Cook rice and milk together very slowly until milk is absorbed and rice is dry. If watery, drain. Remove from stove and cool. While rice is cooling, mix together with beater: eggs, ricotta, sugar, lemon juice, and rind. Add to cooled rice mixture and mix together. Pour into unbaked pie shell. Top with pie crust strips. Bake @ 300 degrees for 1 1/2 hours. Change heat to 325 degrees for last 15 minutes of baking. Sprinkle confectioners sugar on pie before serving.
