Ingredients

  • 2 T unsalted butter
  • 1 small onion, finely chopped
  • salt & pepper
  • 3 3/4 c. chichen broth
  • 1 1/3 c. tubetti or elbow macaroni
  • 1/2 c. heavy cream
  • 1/2 c. freshly grated parmesan
  • 3 1/2 T. mascaropne

Step 1

1. Melt butter in large skillet over med-low heat. Toss in onion, season with salt & pepper and cook, stirring, until soft and translucent, about 10 minutes.
Pour in the chicken broth and bring to a boil. Add the pasta, stir it around and let cook at a steady simmer until it has absorbed almost all the broth, about 20 minutes. (There should be just 1/4 inch or less of liquid bubbling at the bottom of the pan.

2. Pour in cream and allow to simmer 3 minutes until slightly thick. Stir in Parm & mascapone, cook for 1 minute...taste and salt & papper. Pull the pan from the heat and rest for 3 minutes before serving.
