Step 1
Preheat oven to 400°F. Thaw 1 sheet frozen puff pastry. Roll out pastry on a flour-dusted work surface into a 10-by-14-inch rectangle with a long end closest to you. Brush with beaten egg, then cut in half to make 2 (10-by-7-inch) rectangles. Spread 1/4 cup pimento cheese evenly over 1 rectangle using back of a spoon. Place remaining rectangle on top of cheese, egg side down (so cheese is sandwiched between 2 pastry sheets). Gently roll out to make even. Cut horizontally into about 20 (1/2 inch-wide) strips. Grab both ends of 1 strip and twist in opposite directions a few times. Transfer to a parchment-lined baking sheet and repeat. Bake until golden brown, 12 to 15 minutes. Let cool, uncovered, until crisp.
