Ingredients

  • 3 tbsp olive oil
  • 1/2 cup chopped green onion
  • 2 lbs Yukon Gold potatoes - peeled and thinly sliced
  • 1 Tbsp chopped thyme
  • 1/2 tsp salt and pepper
  • 1 cup grated cheddar
  • 1/2 cup grated Parmesan

Preparation

Step 1

Spray custard dishes with spray. Fry onions in oil till soft but not brown. Cool completely. Combine cooled onions with potatoes, thyme, salt and pepper. In another bowl combine cheeses.

Layer potatoes and cheese in each dish pressing down between layers. Finish with cheese on top.

Bake at 400 for 40 minutes. Let stand for 10 minutes.

Makes 6 dishes.
