A basic, but tasty version of Chinese Chicken Salad.

Ingredients

  • 1 lb skinless, boneless chicken breasts
  • 1/2 head napa cabbage, thinly shredded
  • 1/4 head red cabbage, shredded
  • 1 large carrot, shredded
  • 1 can sliced water chestnuts
  • 1 can Mandarin oranges in water, drained
  • 1/4 c sliced almonds, toasted
  • 1 T soy sauce
  • 1/2 t sesame oil

Preparation

Step 1

Combine soy sauce and sesame oil and brush onto chicken breasts. Arrange in baking dish and bake until fully cooked, about 15 minutes at 350.
In a large bowl, combine cabbages, carrot, water chestnuts, mandarin oranges and chicken. Pour your favorite asian sesame salad dressing over salad and toss.
