New Year's Day Casserole

Ingredients
- 4 cups Chopped cooked ham
- 2 Tbsp. Vegetable oil
- 4 Tbsp. All purpose flour
- 3 Low sodium chicken stock
- 1 16 oz Frozen collard greens - chopped
- 1 16 oz Frozen onions, celery, red & green bell pepper
- 1 15 oz Can black eyed peas - rinsed & drained 1/2 tsp. Crushed red pepper flakes
- CORNBREAD CRUST
- 1 1/2 cups White Cornmeal Mix
- 1/2 cup All purpose flour
- 1 tsp. Sugar
- 2 Large eggs - lightly beaten
- 1 1/2 cups Buttermilk
- OR JUST USE JIFFY CORNBREAD MUFFIN MIX!

Step 1
Preheat oven to 425.
Saute ham in batches over medium heat in dutch oven for 5 minutes or until lightly brown.
Add flour and cook for 3 minutes or until broth begins to thicken, stirring constantly. Bring mix to boil, add in collards, onions, celery and pepper. Return to a boil and cook for 15 minutes, stir often. add black eyed peas; spoon mix into lightly greased 13x9 baking dish.
Pour cornbread mix over top. Bake for 20-25 minutes or until cornbread is golden brown.
Combine cornmeal mix, flour & sugar. Add eggs & buttermilk
OR
Just use Jiffy Cornbread mix!
