Ingredients

  • 1 lemon cake mix (and ingredients to make it)
  • 3-4 cups peeled cut-up rhubarb (if frozen, thaw and pat dry)
  • 1 cup white sugar
  • 2 cups half & half (or whip cream)

Preparation

Step 1

Prepare 9x13 pan by spraying with cooking spray and dusting with flour. Mix cake according to package directions. Pour batter into pan. Spread rhubarb on top of batter.

Sprinkle top with sugar. Cover the sugar with half & half or cream. Bake at 350 degrees for 45-60 minutes. The fruit and custard will sink to the bottom and be pudding-like. Serve with whipped cream or ice cream.
