Ingredients
- 2 tablespoons unsalted butter
- 5 cups sliced fresh mushrooms
- 1 cup chopped red onion
- 1/2 cup chopped celery
- 4 cups low sodium vegetable broth
- 1/4 cup uncooked brown rice
- 1 tablespoon low sodium soy sauce
- Sea salt and freshly ground pepper, to taste

Preparation
Step 1
Heat the butter in a large saucepan over medium heat; add mushrooms, onion and celery; sauté for 10 minutes. Add vegetable broth, rice and soy sauce; bring to a simmer and cook for at least 1 hour. Remove from heat, transfer soup to a blender (or use a hand- held blender) and puree until mixture reaches desired smoothness. Return soup to the saucepan and season with salt and pepper.
GLUTEN FREE: Make sure broth and soy sauce are gluten free.
