  • 4 oz. cooked skinless, boneless chicken breast
  • 1 apple
  • 1 stalk celery
  • 1/2 c. halved seedless grapes (10-12 grapes) or 2 tbsp. raisins
  • 2 Tbsp. toasted chopped pecans (1/2 oz/10 halves)
  • 3 c. mixed greens or baby spinach leaves
  • 3 Tbsp. plain nonfat yogurt
  • 1 tbsp. Mayo
  • juice and grated zest of 1/2 large orange
  • 1 tsp. raspberry vinegar
  • 1 tsp. hazlenut oil
  • 1 tsp. honey
  • salt, and pepper

Step 1

Combine dressing ingredients in a small bowl and whisk well. Season to taste with salt and pepper. Toss in chicken breast, cubed, apple, chopped, celery, thinly sliced, grapes, and pecans (don't forget to toast them); serve on 1 c. mixed greens or baby spinach leaves.
