Ingredients

  • Tortillas
  • ground beef or sausage 1.5 - 2 lb
  • onion - 1 lg
  • baking potato - 1-2 lg
  • salt
  • pepper
  • slices of cheese
  • eggs - 2 per person
  • green & red bell pepper
  • salsa - optional

Preparation

Step 1

cut potatoes into very small cubes
brown in frying pan until tender - set aside
brown meat in frying pan with chopped onion
use same pan to
scramble eggs with salt & pepper to taste - take off heat
add potatoes
chop bell peppers into small bits add to egg mix
on warm tortilla place one slice cheese
a few spoonfuls of egg mix
roll up and serve hot with salsa on side
