- 1 tablespoon olive oil
- 24 ounces boneless skinless fish fillets, such as snapper,grouper or sea bass
- 1 cup spicy green salsa
- 4 ounces Monterey Jack cheese, shredded
- 1/2 cup toasted pumpkin seeds

Preparation
Step 1
1. Heat oven to 400 degrees F.
2. Spread olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish. Bake fish 8 minutes.
3. Spread cheese evenly over top. Bake 2-3 minutes more, until cheese is bubbly.
4. Sprinkle with pumpkin seeds before serving.
