Ingredients
- butter 4 TB
- onion 1 med
- garlic - 2 cloves
- shitake mushrooms - 1 lb (stems removed, caps sliced)
- fresh spinach - 24 ounces (chopped)
- flour - 3 TB
- milk - 3 C
- Gruyere cheese - 8 oz ( 2 C)
- salt - 1 tsp
- pepper - 1/2 tsp
- wild rice - 2 C = 4 C cooked
- chicken meat - 3 C shredded = 1 lb

Preparation
Step 1
cook rice until soft
cook & shred meat
heat 1TB butter
add onion, cook until soft
add garlic, cook 1 min
add mushrooms, cook 8 min or until soft
add half of spinach, cook until wilted
add other half of spinach, cook until wilted
In large pot melt 3 TB butter
add flour, cook & stir 1 min
whisk in milk, stir constantly - about 5 min until thick
remove from heat
add cheese
whisk until smooth
add salt & pepper
add spinach mix, rice & chicken
transfer to glass dish & warm
