Ingredients
- 1/2 cup Dry white wine or fat-free chicken broth
- 1/3 cup honey
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped fresh mint
- 2 Tbsp. lemon zest (yellow part only)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 4-7 lb boneless leg of lamb

Step 1
Combine wine or broth, honey, onion, mint, lemon zest salt & pepper. Mix well. Reserve and refrigerate 1/4 cup for basting later. Place lamb in large sealable plastic bag and pour remaining marinade over it. Seal and refrigerate 4 hours to overnight.
Heat oven to 325 degrees
Remove lamb and discard marinade. Place lamb on rack in roasting pan. Bake 20-25 minutes per pound for medium-rare to medium doneness (145-160 degrees). Baste with reserved marinade. Remove lamb from oven, cover lightly and let stand 10 minutes. Slice & serve.
