Classic Buttermilk Waffles (Gluten Free)
"This recipe is for a plain waffle, crisp and golden, perfect w/maple syrup and butter or berries and whipped cream. When made w/pastry flour it will be extra crispy and light as air inside. When made w/all-purpose flour the waffle has a bit more body - still light, but chewier on the inside. Waffles are best consumed as soon as they're baked, but in a pinch you may place them on a wire rack to cool, wrap tightly to store in the refrigerator, then reheat for 6 min in a 350F oven. The optional pecan meal adds a nutty flavor.
Why buttermilk? The acidity in buttermilk tenderizes the gluten (protein) in flour, plus it works with baking soda better than plain milk by neutralizing the flavor of the soda at the same time it is activating it, providing wonderful leavening. "

Ingredients
- To make Gluten Free:
- 4 large eggs
- 1 3/4 c (14oz) buttermilk (use 2 cups if gluten free)
- 1/2 c (1 stick, 4oz) butter, melted and cooled to room temperature
- 2 tea vanilla extract
- 2 c (8oz) unbleached pastry flour or 1 3/4 c (7 1/4 oz) unbleached all-purpose flour
- 2 tabl (3/8) sugar (omit if making savory waffles, such as a base for creamed chipped beef or chicken)
- 2 tea baking powder
- 1 tea baking soda
- 1 tea salt
- 2 T flaxseed meal
- 1/4 c coconut flour
- 1/2 c potato starch or tapioca flour (any starch will do)
- 1/2 c almond flour
- 1/2 c sorghum flour
- To make dairy free buttermilk: Put 1 1/2 T of vinegar into a measuring cup and then pour your favorite dairy free milk to the 1 3/4 c line. Let it sit for at least 5 minutes.
- To make coconut chocolate version:
- Follow above recipe and add 3T cocoa powder, 2t cinnamon and some unsweetened coconut flakes to the dry ingredients. After combining both the wet and dry ingredients add in some dark chocolate chips.

Step 1
In a medium-sized mixing bowl, beat together the eggs, buttermilk, melted butter and vanilla. In another bowl whisk together the dry ingredients; combine the wet and dry ingredients just until smooth. For optimal waffles allow the batter to rest five minutes before cooking.
Spray the waffle iron w/a nonstick cooking spray before preheating it. Cook for 5 min.
