Step 1
Place unsalted butter in a cold skillet, and heat it over medium heat. It should melt somewhat slowly so you can control the browning.
After several minutes, the butter will start to foam and show some color on the bottom of the pan. Swirl the pan or stir the butter occasionally, so it cooks evenly and doesn't burn in some spots before it browns in others. It will splatter; you can use a splatter screen if you like.
The butter is done when it's a deep honey gold color with chocolate brown specks of milk solids that settle at the bottom of the pan. Remove it from the heat and immediately scrape it into a bowl to cool. If left in the pan, it will continue to cook and possibly overcook.
