Ingredients

  • 3 Best of Barbecue Grilling Rings (small)
  • Method: indirect grilling
  • Serves 3 and can be multiplied as desired
  • 3 sweet crisp apples (ideally Fuji apples)
  • 2 tablespoons whipped cream cheese
  • 2 tablespoons brown sugar
  • 1 tablespoon rum or brandy
  • 2 tablespoons unsalted butter
  • ground cinnamon for sprinkling
  • 9 baby marshmallows or 1 or 2 full size marshmallows, thinly sliced (optional)
  • 1-1/2 cups hardwood chips for smoking, soaked in water to cover for 1 hour, then drained (see below)

Step 1

1. Using a small melon baller, core the apples from the top. The idea is to remove the stem end and seeds, creating a cavity in the apple, but leave the bottom intact to hold in the filling. Position the grilling rings over the spikes so the latter are centered. Position an apple-cavity side up-on each ring, pressing to drive the spike through the core.
2. Place 2 teaspoons cream cheese in the cavity in each apple. Top with 2 teaspoons brown sugar, 1 teaspoon rum, and 2 teaspoons butter in that order. Sprinkle a little cinnamon on top and crown the apples with marshmallows, if using.
3. Set up your grill for indirect grilling and preheat to medium (350 degrees). Toss the wood chips on the coals or in the smoker box of your gas grill.
4. Carefully place the apples on their rings on the grate away from the fire. Indirect grill until apples are golden brown and tender, 40 to 60 minutes. To test for doneness, squeeze the sides-they should be quite soft.
5. Present the apples on the rings, but remove from rings with tongs for serving. A scoop of ice cream wouldn't hurt.
