Ingredients

  • 1 cup dry lentils
  • 1 medium onion
  • 4 cups broth/stock/water
  • 1 8oz can tomatoes
  • 1 tbsp worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp thyme
  • 1/4 tsp pepper
  • bay leaf
  • 2 carrots
  • 10 oz frozen spinach
  • 1 tsp vinegar

Preparation

Step 1

Rinse lentils and set aside
saute onion in lg stockpot
stir in lentils, tomatoes, broth, worcestershire sauce, salt, thyme, fennel, garlic, pepper and bayleaf
bring to a boil, reduce heat, simmer for 20 minutes
add carrots and frozen spinach, bring to a boil, simmer for 15 minutes
stir in vinegar, discard bayleaf
