Blueberry Lime Bread

Ingredients
- 1 cup unbleached all purpose flour
- 3/4 cup white-whole wheat flour or whole wheat pastry flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup plain nonfat yogurt
- 1/2 cup agave nectar
- 1/4 cup canola oil
- 2 eggs
- 1/2 teaspoon vanilla
- zest of one lime
- 1 cup fresh or frozen blueberries, tossed in 1 teaspoon flour

Preparation
Step 1
Preheat the oven to 325 degrees. In a large bowl, combine the flours, baking powder, baking soda and salt. Set aside.
In a medium bowl, whisk together the wet ingredients, yogurt, agave, canola oil, eggs and vanilla. Add to the dry ingredients and mix just until combined. Fold in the lime zest and blueberries.
Pour the batter into a greased loaf pan. Bake for about 60 – 65 minutes, or until a toothpick inserted in the middle comes out clean. Allow the loaf to cool for ten minutes in the pan, and then remove and cool completely on a wire rack.
To make the glaze: 1/3 cup powdered sugar, juice of 1/2 of a lime
Whisk together the powdered sugar and lime juice until you have a glaze-like consistency. Drizzle over the top of the cooled bread. It’s delicious eaten slightly warm. Enjoy!
