Ingredients
- 3 cups warm water (105°F to 115°F)
- 3 tbs sugar
- 3 envelopes dry yeast
- 1/2 cup olive oil
- 5 tsp salt
- 9 cups (or more) all purpose flour

Step 1
Combine 3 cups warm water and sugar in medium bowl. Sprinkle yeast over water. Let stand until mixture is foamy, about 10 minutes; add oil and salt. Mound 9 cups flour on work surface (or use large bowl) Make well in center and pour yeast mixture into well. Gradually mix flour into yeast mixture, kneading until dough forms. Continue to knead until dough is smooth and elastic, sprinkling with more flour by tablespoonfuls if dough very sticky, about 8 minutes.
Oil large bowl. Add dough and turn to coat. Cover bowl with plastic wrap, then towel. Let rise in warm draft-free area until doubled in volume, about 1 hour. Punch dough down; knead gently until smooth. Shape into 6 balls.
