Ingredients
- Pineapple Butter Cream Frosting:
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups sifted flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 can crushed pineapple, drained
- 1 cup oatmeal
- 1/4 cup butter, softened
- 2 cups sifted confectioners sugar
- 1/4 cup pineapple juice
- Few drops yellow food coloring

Step 1
Beat butter and sugar together until creamy. Blend in egg and vanilla. Sift together flour, baking powder, and salt. Add to creamed mixture with pineapple; mix well. Stir in oats. Drop by teaspoonfuls onto ungreased cookie sheets 2 inches apart. Bake in preheated 350 degrees oven for 12 minutes. Cool.
*Pineapple Buttercream Frosting:* Beat butter until creamy. Add sugar, pineapple juice and food coloring. Beat until smooth. Frost cookies.
