World Famous Fruit Compote

Tips: Chilled compote is delicious mixed with vanilla yogurt or eaten straight from the bowl. The compote can also be served over ice cream for a fruity dessert. It can be stored, covered, in the refrigerator for several days.

- 4 fresh apples (Gala, Pink Lady or Fuji)
- 4 fresh peaches
- 2 cups fresh cherries, pitted and halved
- 1 tbsp fresh lemon juice
- 1/2 cup sugar
- 2 tsp cornstarch
- 2 tbsp cold water

Preparation
Step 1
Peel and thinly slice apples and peaches, removing pits and seeds.
Combine apple and peach slices in a bowl with cherries, lemon juice and sugar. Stir together until the fruit is coated with lemon juice and the sugar is mostly dissolved.
In a separate small bowl, mix cornstarch and water until the cornstarch is dissolved and the mixture resembles a watery paste.
Pour the fruit mixture into a heavy saucepan, bring to a boil and then immediately reduce the heat to a simmer.
Stir in the cornstarch mixture and simmer for another 5 to 6 minutes, or until the apples are just beginning to soften but are still slightly crisp-tender.
Serve the compote warm over waffles, oatmeal or pancakes.
