Ingredients

    c - Butter

  • 1/2

    c - Brown Sugar, sifted

  • 2

    - Egg Yolks

  • 1/2

    c - Molasses

  • 2

    c - Sifted Cake Flour

  • 1

    tsp - Baking Soda

  • 3/4

    c - Water

  • 1

    tsp - Vanilla

  • 2

    - Egg Whites

  • 1/4

    tsp - Salt

  • Orange Molasses Frosting:

  • 1/3

    c - Butter

  • 3

    c - Sifted Confectioner's sugar

  • 1/8

    tsp - Salt

  • 1

    T - Orange Juice

  • 3

    T - Molasses

  • 2

    tsp - Grated Orange Rind

Directions

Beat butter until soft. Add brown sugar gradually. Blend until light and creamy. Beat in egg yolks one at a time. Beat in molasses. Resift cake flour with soda. Add sifted ingredients to butter mixture in three parts alternately with thirds of water and vanilla. Whip egg whites and salt until stiff but not dry. Fold them lightly into batter. Bake cake in two greased 9" layer pans at 375 degrees for about 30 minutes. Spread with frosting. For the frosting: Cream butter until soft. Gradually stir in one cup confectioners sugar and the salt. Blend in molasses, orange juice and orange rind. Add remaining sugar gradually until frosting is proper consistency for spreading.
