Ingredients

  • Dressing:
  • 12 oz dried linguine, preferable tricolour
  • 3 green onions, sliced
  • 1 1/2 cups mushrooms, sliced
  • 1/3 cup shredded basil or chopped cilantro
  • 3 tbsp chopped peanuts
  • 1/4 cup soy sauce
  • 2 tbsp peanut butter
  • 2 tbsp white wine vinegar
  • 2 tbsp water
  • 1 1/2 tbsp sugar
  • 1 1/2 tbsp finely chopped, peeled ginger
  • 1 tbsp peanut oil
  • 1/2 tsp sesame oil
  • Couple drops of hot pepper sauce

Preparation

Step 1

Bring a large saucepan of salted water to the boil. Add pasta and cook until tender. Drain well and rinse under cold running water. Drain very well. Turn into a large bowl. Toss with onions, mushrooms, basil and peanuts.

Meanwhile, prepare dressing by whisking all ingredients together until blended. Toss pasta with dressing. Taste and adjust seasonings, if necessary.

Pasta salad can be covered and refrigerated for up to three days.
