  • meatballs
  • 2 1/2 pound ground spicey pork sausage
  • 3/4 cup minced garlic
  • 3/4 cup finely chopped onion
  • 3/4 cup finely diced carrot
  • 3/4 cup freshly chopped cilantro
  • 2 tablespoons granulated sugar
  • 3 tablespoons crackled ground pepper
  • romesco sauce
  • 1/2 cup roasted almonds
  • 1/2 cup roasted garlic
  • 2 toasted roma tomatoes
  • 3 roasted red bell peppers
  • salt and pepper to season

Preparation

Step 1

For the meatballs, mix the ingredients, then form into pingpong size balls. Deep-fry into vegetable oil until fully cooked

For the romesco sauce, Blacken red peppers on stove,,roast the rest of the ingredients, then blend all the ingredients together and serve on top of the meatballs.
