- 4 ear corn, husked
- 2 tea. olive oil
- 1/4 cup chopped red onion
- 6 slices bacon, cooked and crumbled
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. white wine vinegar
- salt and pepper

Step 1
Preheat oven to 400 degrees. Coat baking sheet with cooking spray. Brush corn all over with oil; place on baking sheet. Roast 20 minutes or until corn is golden brown and tender, turning halfway through cooking. When corn is cool enough to handle, cut kernels from cobs and transfer to a large bowl.
Add onion, bacon, parsley and vinegar; toss to combine.
Season to taste with salt and pepper before serving.
