Ingredients

  • 1 1/4 cup whole wheat flour
  • 1 cup wheat bran
  • 1/2 cup All-Bran
  • 1/3 cup Splenda
  • 1/2 cup boiling water
  • 1 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup dried cranberries
  • 1 cup skim milk
  • 1 Omega-3 egg, lightly beaten
  • 1/4 cup canola oil
  • 1 tsp. cinnamon

Preparation

Step 1

Preheat oven to 375F. Line a 12-cup muffin tin with paper cups. In large bowl, combine bran, All-bran and salt. Pour boiling water over top and stir to combine. Stir in milk and cranberries and set aside. In another bowl, stir together flour, Splenda, baking soda and cinnamon. Pour bran mixture over flour mixture and stir until just combined. Divide batter among muffin cups. Bake 21-24 mins.

Freeze individually wrapped muffins for up to 1 month in resealable plastic bag.
