Mexican Lasagna Roll Ups

Ingredients
- 8 uncooked lasagna noodles
- 3 cups salsa, divided
- 1 pound ground beef
- 1 package (1 1/4 ounces) taco seasoning mix
- 1 cup (4 ounces) shredded Monterey jack cheese
- 1 cup (1/2 pint) sour cream
- 1 can (2.25 ounces) sliced black olives, drained (1/2 cup)

Preparation
Step 1
1. Preheat the oven to 350°F.
2. Cook the lasagna noodles according to the package directions; drain and set aside. Spread 1 cup of the salsa onto the bottom of a 9" x 13" baking dish that has been coated with nonstick vegetable spray; set aside.
3. In a medium-sized skillet, brown the ground beef over medium-high heat for about 10 minutes; drain excess liquid. Stir in the taco seasoning mix and 1 cup of the salsa.
4. Cut each noodle in half, spread each half with 2 tablespoons of the beef mixture, and roll up. Place the lasagna roll-ups in the baking dish. Pour the remaining cup of salsa over the roll-ups and sprinkle the top with the cheese. Cover loosely with aluminum foil and bake for 22 to 25 minutes or until the cheese is melted.
5. Before serving, spoon 1 tablespoon of sour cream on each roll-up and sprinkle with sliced black olives.
Notes
Mild, medium, or hot salsa...the choice is yours.
